Recipe: Vegan Apple Cinnamon Muffins

Pumpkin pancakes, McClure’s bloody mary mix, tofu scramble, roasted potatoes, faken…if Pants is the king of brunch, Nicole is definitely the queen. We were invited over to have breakfast for dinner (and an Ace of Base sing along??) last week and I decided to be a good guest and whip up some muffins. I had intended on making blueberry, but somehow made it home from the grocery store (TWICE) without any. Good thing I had a bunch of apples in the fridge :)

I half used the original recipe, half made it up as I went along and out of the oven popped not only delicious muffins, but Pants (the meat eater, everything vegan is gross and vegany) approved muffins! And they were so good he said I should post the recipe, so here ya go!

Vegan Apple Cinnamon Muffins

Makes 18

1/4 cup soy margarine
1/2 cup unsweetened applesauce
1/2 tsp. salt
1 cup granulated sugar
2 cups all-purpose flour
1 T baking powder
1 t vanilla extract
2 t cinnamon
1 t nutmeg
1 t all spice
1/2 cup soymilk
1 1/2 cups peeled & chopped apples – about 3 apples depending on the muffin to apple ratio you like

1. Preheat oven to 350F. Line muffin cups with paper liners or spray with cooking spray.

2. Mix all ingredients together in mixing bowl.  Spoon into muffin cups, filling three-quarters full. Mix a little (or a lot!) extra cinnamon and sugar and sprinkle on top.

3. Bake 35 minutes, or until tops are firm. Cool slightly on rack.

Now, if you want to get crazy and un-vegany you can do what we did for a few of the muffins and place mini stroopwafels in the bottom of each liner before pouring in the batter. They get all gooey and delicious :) And I have it on good authority that they can be found at Cracker Barrel.
