Green Soup

I cook like my grandmother. We both have a tendency to watch a cooking show on TV or scan a recipe and then toss ingredients together, half recalling the steps, half making it up. Sometimes this plan of action goes well and sometimes it does not. We’ve had plenty of strange concoctions at her house, but it’s part of the fun of having dinner there and I hope when I’m an old granny my offspring will be equally entertained by my cooking.
So when my produce shipment showed up on Wednesday I just started throwing things in a pot in the hope of ending up with soup.

Onion and garlic, one zucchini, 1 cup steamed broccoli and a handful of spinach. Added a little veggie stock, milk and salt & pepper and then transferred it into my Magic Bullet blender. A few cubes of sharp cheddar and a quick spin…

GREEEEEEN SOUP! This was one of the times it magically turned out delicious and it’s pretty healthy too. I’ve been trying to eat meals of mostly veggies (had corn on the cob and a tomato too) so I’ll be making this one again!
















This looks delicious! I love all the greens in it. And anything is better with a little cheddar :)

Wow, that soup looks amazing! I’ll definitely have to give that a whirl. I’m on Weight Watchers right now so I’m trying to keep it healthy myself. Great job!
I think it’s about 250 cal/bowl depending on how much cheese and milk you put in. Really filling too, so it will be perfect for WW.
This looks great, and I totally cook like this too! Autumn is the best for grabbing whatever’s fresh off the farm and turning it into soup. I hope you post more concoctions in the coming season :)
