My mom makes these apple cinnamon muffins all the time. I’m not sure where the recipe is from – it’s on a page from a magazine with a coupon on the back dated 1995.

Apple Cinnamon Muffins

2 cups all-purpose flour
1/2 cup packed light brown sugar
2 t baking powder
1 t baking soda
1/2 t salt
1 cup buttermilk
1/4 cup vegetable oil
2 t vanilla extract
1 egg
2 cups apples
1 T sugar
1 t ground cinnamon

Preheat oven to 400 degrees. Grease 12 muffin pan cups.

In a large bowl mix the first 5 ingredients. In a small bowl, with a wisk, beat buttermilk, vegetable oil, vanilla extract, and egg. Stir into flour mixture until just moistened. Fold in apples.

In a bowl mix sugar and cinnamon. Spoon batter into muffin tin; sprinkle with cinnamon sugar. Bake for 25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
