Pumpkin Pancakes & Pumpkin Cheesecake
I went into work late on Tuesday so Aaron came over and I make pumpkin pancakes for brunch. They were so good I didn’t even have a chance to take a picture before they disappeared. I also make pumpkin cheesecake for a bake sale at work and got lots of compliments!

Mini Pumpkin Cheesecakes

12 gingersnap cookies
1 (8 oz. ) pkg. cream cheese, softened
1 cup pumpkin
1/2 cup sugar
1 teaspoon pumpkin pie spice (cinnamon, nutmeg, ginger, cloves)
1 teaspoon vanilla
2 eggs

Preheat the oven to 325 degrees. Place 12 muffin cup liners in a muffin tin. Place a gingersnap cookie in the bottom of each liner. Beat cream cheese, pumpkin, sugar, pumpkin pie spice, and vanilla until well blended. Add the eggs and beat well. Divide bater equally among the 12 muffin cups. Bake for 20-25 minutes or until set. Cool in the pan on a wire rack. Remove from the pan and chill before serving.

Vegan Pumpkin Pancakes

1¼ cup Heart Healthy Bisquick
2 teaspoons sugar
1 teaspoon cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground allspice
¼ teaspoon ground cloves
½ cup pumpkin
1 cup water or non-dairy milk
1 tablespoon canola oil

Lightly oil and heat a skillet to medium-low heat. Mix all of the dry ingredients together in a small bowl. When the skillet is hot, pour out pancakes in ½ cupfuls. When the edges of the pancake appear dry and bubbles stop forming flip the pancake. Be sure to keep the skillet oiled between pancakes otherwise they will be guaranteed to stick. Serve warm with vegan margarine and maple syrup.

Yield: 7 servings

Curly Hair
I figured out that it takes about the same time to curl my hair as it does to straighten it. I just grab small sections, spray them with hair spray and wrap them around the outside of the curling iron. Once it’s all done I run my fingers through to break up the curls and spray with hair spray again. Still looks good the second day!

Dance Party Wednesday
Last night, as I was getting down on the packed dance floor to Lady Gaga and Justice, I looked around and realized – if it weren’t for our group of friends, the dance floor would be pretty empty. I should also point out, that there are way more dudes than ladies in our group and they all have amazing moves. Of course, I have the best dance partner! Too bad I never have pictures because we’re having way too much fun.

    hey, just stumbled across your blog while looking for some hair-spiration. what size curling iron did you use, and do you curl all the same direction?

    i’m even thinking about taking the plunge and getting a permanent wave (a perm? who does that anymore??) i know, but my straight hair is a total yawnfest these days.

    when i googled “mom hair” (for a reference pic for my stylist of what i don’t want), i saw your august 27th entry, and i love it! that’s the kind of volume i’m looking for.

    I think I’m gonna have to steal that mini pumpkin cheesecake recipe! I’m doing a bake sale later on this month and those sound good!!!

    ALSO, I wish I could curl my hair. I mean, I can, but it’s tough for me to do. I wish I could curl it more easily.
